The fundamental reason this classification exists is to perform the full range of food preparation tasks in a large-scale food service operation including preparing special diets and regular foods; taking inventory of supplies on hand; ordering food service supplies, ingredients, and other consumables on a scheduled basis; cleaning and sanitizing all food preparation equipment ensuring safe and operable condition; and directing the activities of Food Service Workers and/or volunteers.
ESSENTIAL FUNCTIONS:
- Performs the full range of food preparation including, cleaning, cutting, peeling, opening containers, or sorting certain food items;
- Maintains quantity and quality of food and portions food accurately, attractively, and maintains proper serving temperatures of food;
- Inspects and maintains all food preparation equipment for cleanliness and safe operability;
- Maintains inventory of supplies on hand and orders food service supplies, ingredients, and other consumables on a scheduled basis;
- Directs the activities of food service workers and volunteers;
- Demonstrates continuous effort to improve operations, decrease turnaround times, streamline work processes, and work cooperatively and jointly to provide quality seamless customer service.
Required Knowledge, Skills and Abilities:
Knowledge of:Ability to:
- Methods, materials, and practices of safe food preparation and handling used in kitchen operation and related activities.
- Proper methods to inventory and store food, supplies, and disposables, and maintain inventory.
- Use of standard food preparation tools, utensils, and portion control equipment.
- Proper methods for washing, sanitizing, and storing all tableware and kitchenware.
- Oversight of work performed by others.
- Follow prescribed procedures for monitoring temperatures, quantity and quality of food and portion control.
- Maintain adequate stock levels of food, supplies, and equipment inventory.
- Clean work area, equipment and floors, using broom, mop, and sponge, cleaning solution or other appropriate tools or materials.
- Move objects between 20-50 pounds short distances (20 feet or less).
- Communicate orally in the English language with customers, clients, or the public in face-to-face one-on-one settings, in group settings, or using a telephone.
- Understand and follow oral and written instructions in the English language.
- Work cooperatively with other City employees and the public.
- Work safely without presenting a direct threat to self or others.
Additional Requirements:
- Must possess a current Maricopa County Food Service Worker License at the time of hire.
- Some positions require the use of personal or City vehicles on City business. Individuals must be physically capable of operating the vehicles safely, possess a valid driver's license and have an acceptable driving record. Use of a personal vehicle for City business will be prohibited if the employee is not authorized to drive a City vehicle or if the employee does not have personal insurance coverage.
ACCEPTABLE EXPERIENCE AND TRAINING:
Two years of experience in commercial or other large-scale food preparation including one year preparing meals according to specialized diets. Previous purchasing and inventory experience is preferred. Candidates must be able to communicate in the English language. Other combinations of experience and education that meet the minimum qualifications may be substituted.
